- Explain wine profiles, regions, and vintages to guests in an engaging and accessible manner.
- Manage wine procurement, ordering, storage, cellar organisation, and inventory records.
- Monitor stock levels, wine consumption, wastage, pricing, and profit margins to maintain effective cost control.
- Drive wine sales through informed recommendations, appropriate upselling, and food-pairing suggestions.
- Conduct wine briefings and train service staff on wine knowledge, pairings, and service standards.
- Collaborate with the culinary and bar teams on seasonal pairings, wine tastings, and special dining experiences.
- Maintain consistent wine quality, availability, and service standards for the first-floor dining experience.
Qualifications
- Prior experience as a Sommelier or in a wine-focused role within a premium restaurant, luxury hotel, or fine-dining establishment.
- Strong knowledge of global wine regions, grape varietals, vintages, and production methods.
- Expertise in wine pairing, presentation, decanting, and table-side service.
- Experience in inventory management, cellar operations, and cost control.
- Excellent communication, interpersonal, and guest engagement skills.
- WSET, Court of Master Sommeliers, or equivalent certifications are an advantage.
- Flexibility to work evenings, weekends, and holidays.
